The 'Alvéole' Collection by Tristan Rousselot

To celebrate the end of the year, our pastry chef Tristan Rousselot and his team are delighted to unveil the sweetness and benefits of honey through four original creations.

 

This limited edition collection was created with honey and Propolis, well known for its health benefits, harvested by 'Be Happy Miel', an association that is dedicated to urban beekeeping.

The 'Alvéole' Yule Log

In 2021, Prince de Galles Hotel's Christmas log is inspired by the alveoli of a beehive. Tristan Rousselot unveils a dessert of character with an almond and praline crunch, a chestnut honey cookie softened by a propolis cream and a lemongrass vanilla mousse, that brings a touch of freshness.
The frame is made of blond chocolate and topped with an almond praline.

 

Tristan Rousselot's Yule Log can be shared with 6 or 8 people. Price : 95 €.

The Kings' Cake 'Alvéole'

Composed of an almond frangipane and a chestnut honey, the Prince de Galles' 'Galette des Rois', imagined by Tristan Rousselot, is revealed under a crispy puff pastry gilded with honey, that reminds us of the alveoli of the beehive.

 

The 'Fève' that will slip in was imagined and created by Angela, member of the pastry team and passionate about pottery.

 

For 6 to 8 people. Price : 45€.
